Bruschetta with ham, rocket salad and Parmesan cheese
This dish is very popular in my family. At first…everybody told me, that nobody will eat salad, which looks like dandelion...but after first bite it was evident, that bruschettas with ham, rocket salad and Parmesan cheese will become the main dish served on our family celebrations. This dish is very simple, but is full of flavours.
Ingredients for approx. 4 to 5 servings:
- baguettes or white bread (approx. 500 g = 1,1 lb.)
- cut into slices (width approx. 1 – 1,5 cm = 0,4 – 0,6 in.)
- rocket (arugula) salad (125 g = 4,4 oz.)
- chop into very coarse pieces
- lemon juice from one lemon
- weight of lemon approx. 150 g = 5,3 oz.
- you win approx. 3 – 4 tbsp. of lemon juice
- Parma or Schwarzwald ham (150 g = 5,3 oz.)
- cut into coarse pieces
- olive oil (6 tbsp. + to sprinkle the baguettes)
- Parmesan cheese (according to taste) (Tips ↓1)
- make Parmesan curls or grate into coarse pieces
- fresh ground pepper
Preparation:
- bake dry slices of baguettes (or white bread) in the pan or in toaster (I prefer toaster)
- place baked baguettes/bread on tray and sprinkle each slice well with olive oil (use quality virgin olive oil)
- put rocket (arugula) salad into big bowl, add juice from one lemon and olive oil (6 tbsp.)
- stir well
- lay out equally the rocket (arugula) salad on each slice of baguettes (or bread)
- then put equally the pieces of ham too
- sprinkle with Parmesan curls or with grated Parmesan cheese
- sprinkle each bruschetta with olive oil again
- at last sprinkle with fresh ground pepper
Tips:
- It is better to use Parmesan curls than grated Parmesan cheese. The bruschetta will be easier to consume.
